COOKING WITH AMEO
Tim and I love to cook and we enjoy time together at the end of the day in the kitchen. Nutrition and flavor are of course essential when preparing meals. We are always exploring new culinary ways to expand flavors. Recently AMEO launched a new cookbook by Karen Jensen.
Here are some tips from her book when using food grade AMEO oils.
A little goes a long way and less really is more
- Lemon, orange, tangerine and grapefruit can add zest and full flavor to drinks, desserts and savory recipes as well as support a proper balance in the gut
- Cinnamon, clove, nutmeg and ginger are warming, these make great additions to winter recipes or to simply add a little kick to your dishes
- For meat dishes consider oils such as sweet basil, clove and rosemary
- For fish and seafood consider true lavender, lemon, orange and rosemary
- For poultry consider sewer basil, lemon, orange and rosemary
- Salad dressings consider sweet basil, clove, true lavender, lemon and rosemary in an olive oil and vinegar base then use honey or pure maples syrup as a base for citrus oil in fruit salads
It is so satisfying to be creative and experimental while promoting health and well-being at the same time!
Recipes
True Lavender Pasta or Rice
Serves 4-6
Ingredients
1 quart cooked rice or pasta
1 drop Ameo True Lavender
1 Tb. olive or grapeseed oil
Sautéed mixed seasonal vegetables.
Preparation
1. Mix olive oil and essential oils together.
2. Top warm pasta or rice with pasta or rice oil mixture and toss until well mixed.
3. Top pasta or rice with sautéed vegetables.
Meatballs
Serves 2-4
Ingredients
2 lbs. ground meat: beef bison, turkey or chicken
2 Roma tomatoes, diced
½ c. steel cut oats
½ tsp. dried oregano
1 T. dried parsley
2 drops Ameo Sweet Basil oil
1 drop Ameo Ginger oil
Preparation
1. Mix ingredients thoroughly in a bowl.
2. Let mixture sit under plastic wrap for 10-15 minutes or overnight before forming balls.
3. Bake on baking sheet or pan at 375 degrees for 50-60 minutes keeping covered during baking to preserve essential oil properties and flavor; alternatively you may choose to sauté gently until crisp, keeping covered with a lid to preserve essential oil properties and flavor.
Lemon Coconut Cream
Mix 4 Tb. coconut cream and 4-6 drop of AMEO lemon oil. Place over bowl of fresh mixed berries and enjoy!
The cooking class was excellent. We learned how to make a number of recipes that I would use at home. It was interesting to learn about different healthier options to every day ingredients
